Ingredients

  • 2 packets (about 14g) unflavored gelatin or 1 packet flavored gelatin
  • 2 cups mixed fruit juice (or water + juice concentrate)
  • 1 cup fresh mixed fruits (strawberries, blueberries, kiwi, orange segments)
  • 2–3 tbsp honey or sugar (to taste, optional)
  • 1 tsp lemon juice (for brightness)
  • Pinch of salt

Step-by-Step

1. Bloom the Gelatin

Sprinkle gelatin over ½ cup cold juice and let it sit 5 minutes until it softens and absorbs the liquid.

2. Dissolve Gently

Heat the remaining juice until warm (not boiling). Stir in the bloomed gelatin until fully dissolved. Add sweetener and lemon.

3. Cool & Add Fruit

Let the mixture cool to room temperature. Gently fold in the prepared fresh fruits (avoid pineapple, kiwi, or papaya if using unflavored gelatin — they can prevent setting).

4. Chill Until Set

Pour into a mold or individual cups. Refrigerate at least 4 hours (or overnight) until firm and jiggly.

5. Unmold & Serve

Dip the mold briefly in warm water, invert onto a plate, and garnish with extra fresh fruit or mint. Enjoy cold!

Pro Tips

Use juice instead of plain water for more flavor. For layered gelatin, let each layer set partially before adding the next. Store covered in the fridge up to 3–4 days.
